why? Would it just be humidity or does paper age in a few days enough to
make a difference in platinum?

I don't know about other folks but one thing I do before printing plt/pld is to move the desired paper(s) into my darkroom where I coat, at least 24 hours before use. I also make sure my humidifiers are running to maintain about a 60% relative humidity. It sits on a clean drying screen which I assume allows good air circulation around the paper. I keep a small floor fan running to help move air in the darkroom.

I don't know about the aging part.
